  • 1 cup Red and Green Sprinkles for festive flair

Method
 

Step-by-Step Instructions for Mini Christmas Cheesecakes
  1. Preheat your oven to 325°F (160°C).
  2. Combine softened cream cheese and granulated sugar in a mixing bowl and blend until smooth.
  3. Add vanilla extract and sour cream, blend well, then add eggs one at a time.
  4. In a separate bowl, mix crushed graham crackers with melted butter until evenly moistened.
  5. Line a mini muffin tin with cupcake liners and press the crumb mixture firmly into the bottom.
  6. Pour the cheesecake filling over the crust, filling each liner three-quarters full.
  7. Bake in the preheated oven for approximately 20 minutes until set but slightly jiggly.
  8. Allow the cheesecakes to cool in the tin for 10 minutes, then transfer to a wire rack.
  9. Chill in the refrigerator for at least 2 hours.
  10. Once chilled, decorate with red and green sprinkles and serve.
