- Finely crush the mint Oreos in a food processor or by using a rolling pin until you achieve fine crumbs. Combine these crumbs with softened cream cheese until smooth.
- Roll portions of the mixture into bite-sized balls, approximately one inch in diameter. Place on a lined baking sheet, spaced apart.
- Refrigerate the truffle balls for at least 30 minutes to firm up.
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each truffle in melted chocolate and allow excess to drip off.
- Allow the chocolate-covered truffles to set at room temperature or refrigerate for about 15 minutes. Add crushed Oreos or drizzle extra chocolate before serving.
