- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray, or line with parchment paper.
- Grate 1 cup of fresh zucchini and gently squeeze out moisture, leaving some for the bread to stay moist.
- In a large bowl, combine 1 cup all-purpose flour, 1 cup whole wheat flour, ½ cup cocoa powder, 1 tsp baking soda, ½ tsp baking powder, salt, and cinnamon. Whisk thoroughly.
- In a separate bowl, beat together 2 eggs, ½ cup vegetable oil, ½ cup granulated sugar, and ½ cup brown sugar until smooth. Stir in 1 tsp vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in the grated zucchini, 1 cup chocolate chips, and optional nuts until just mixed.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle additional chocolate chips on top.
