  • 1 cup All Purpose Flour Substitute with gluten-free flour if needed.
  • 1 tsp Baking Powder Ensure it’s fresh for the best rise.
  • 1 tsp Baking Soda Additional leavening agent.
  • 1/2 tsp Fine Sea Salt Kosher salt can also be used.
  • 1 cup Granulated Sugar Sweetens the batter.
  • 2 tbsp Fresh Lemon Zest Finely grated.
  • 1/2 cup Unsalted European Style Butter Softened.
  • 2 Large Eggs Room temperature for the best results.
  • 1 tsp Vanilla Bean Paste Can be substituted with vanilla extract.
  • 1/4 cup Fresh Lemon Juice Use fresh for optimal flavor.
  • 1/2 cup Buttermilk Can be substituted with vinegar and milk.
  • 1/2 cup Raspberry Jam Filling for the cupcakes.
For the Swiss Meringue Buttercream
  • 4 Egg Whites Egg Whites Room temperature.
  • 1 cup Granulated Sugar (for frosting) Sweetens the buttercream.
  • 1 cup Unsalted Butter (for frosting) Softened but not melted.
  • 1 tsp Vanilla Bean Paste Flavoring for frosting.
  • 1/4 cup Raspberry Jam (for frosting) Use high-quality jam.
  • Fresh Raspberries Fresh Raspberries Optional decorative topping.

Method
 

Raspberry Jam Filling
  1. In a saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice. Stir until it reaches a boil, then simmer for about 5 minutes. Whisk in cornstarch mixed with water until thickened, then cool completely.
Cupcake Preparation
  1. Preheat your oven to 350°F (180°C). Line a cupcake pan with paper liners.
  2. In a mixing bowl, whisk the flour, baking powder, baking soda, and salt. In another bowl, mix sugar and lemon zest. Beat in softened butter, then add eggs and vanilla. Finally, mix in lemon juice and buttermilk.
  3. Fill cupcake liners about two-thirds full and bake for 15-25 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
  4. Once cooled, use a knife to cut out a small circle from each cupcake center and fill with raspberry jam.
  5. For the buttercream, whisk egg whites and sugar in a heatproof bowl over simmering water until mixture reaches 160°F. Beat until stiff peaks form, then add butter, vanilla, and raspberry jam.
  6. Pipe the buttercream onto filled cupcakes and optionally decorate with fresh raspberries.
