- Combine softened goat cheese with half of the chopped bacon in a mixing bowl. Mix until smooth and well-blended.
- Transfer the cheese and bacon mixture onto plastic wrap and shape into a log. Wrap tightly and refrigerate for at least 1 hour.
- Remove from refrigerator, unwrap, and press remaining chopped bacon around the log. Drizzle hot honey over the top.
