Preparation Steps
  1. Begin by rolling out your pie crust on a lightly floured surface. Use a 4-inch round cookie cutter to cut out circles, then gently press each circle into the bottom and sides of a greased muffin tin. Pop the tin in the freezer while you prepare the filling.
  2. Preheat the oven to 375°F (190°C) while the crusts chill.

  4. Remove muffin tin from the freezer. Fill each crust about three-quarters full with the egg mixture.
