- Begin by melting the white chocolate chips along with the coconut oil in a microwave-safe bowl. Heat in short bursts of 10-15 seconds, stirring after each interval, until the mixture is smooth and glossy.
- In a large mixing bowl, combine the protein powder, oats, cinnamon, and your choice of sweetener. Stir the mixture well until all ingredients are evenly dispersed.
- Gradually pour the melted chocolate mixture into the dry ingredients, stirring continuously. Mix until the chocolate is fully incorporated and resembles a sticky dough.
- Using your hands, scoop out portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place each ball on a baking sheet lined with parchment paper.
- Transfer the baking sheet to the freezer. Chill them for 20-30 minutes until they are firm to the touch.
