Ingredients

For the Base
  • 75 g Weetbix For variety, substitute with Weetabix or other wheat biscuits.
  • 1 cup dates Opt for pitted dates; raisins can be a good substitution if needed.
  • 1/2 cup sunflower seeds Feel free to replace with other seeds or nuts like pumpkin seeds or almonds.
  • 3/4 cup desiccated coconut You can omit it or swap with shredded almonds for a nutty twist.
For the Flavor
  • 1/4 cup cocoa powder Choose unsweetened cocoa; carob powder is a great alternative for a non-cocoa option.
  • 1/4 cup honey Use maple syrup as a perfect vegan option!
For the Final Touch
  • 100 g dark chocolate Make sure it’s dairy-free for a vegan treat; vegan chocolate alternatives work well too.
  • 1-2 tbsp water Add as needed to create a moldable, sticky texture.

Equipment

  • Food Processor
  • loaf tin
  • baking paper
  • double boiler

Method

Step-by-Step Instructions
  1. Begin by gathering all your ingredients for the No-Bake Weetbix Slice. In a food processor, combine 75g of Weetbix, pitted dates, sunflower seeds, desiccated coconut, cocoa powder, and honey.
  2. Pulse the ingredients in the food processor for approximately 3 to 5 minutes. Stop occasionally to scrape down the sides, ensuring an even blend.
  3. Line a loaf tin with baking paper, allowing some overhang for easy removal later. Spread the baking paper evenly along the base and sides.
  4. Melt the dark chocolate gently in a double boiler or microwave, stirring until smooth.
  5. Transfer the blended mix into the prepared loaf tin. Press it down firmly and evenly across the base.
  6. Drizzle or spread the melted chocolate over the top of the pressed mixture.
  7. Place the assembled slice in the refrigerator and let it chill for at least 2 hours.
  8. Once set, remove the No-Bake Weetbix Slice from the tin using the overhanging baking paper. Slice into 16 pieces.
