Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 13x9-inch baking pan.
  2. In a stand mixer, crack in the eggs and beat on high speed for 3 to 5 minutes until doubled in volume.
  3. In a saucepan, heat the milk and butter over low to medium heat until the butter melts and the milk is scalded.
  4. Slowly add the sugar and vanilla to the eggs, then sift in the flour and baking powder, mixing until just combined.
  5. Gradually pour in the hot milk and butter mixture, mixing until just blended for a smooth batter.
  6. Pour the batter into the prepared pan and bake for 30 to 35 minutes until golden and a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
