Step‑by‑Step Instructions
- Prepare Hot Fudge Sauce by combining chocolate and cream in a saucepan over low heat until smooth, then set aside to cool.
- In a large mixing bowl, whisk together all dry ingredients: flour, Dutch process cocoa, black cocoa, milk powder, salt, baking soda, espresso powder, and baking powder.
- Melt the butter, then mix it with buttermilk, canola oil, vanilla extract, eggs, and skyr yogurt until smooth.
- Gently fold the wet ingredients into the dry mixture, mixing just until combined; a few lumps are okay.
- Fold in chopped dark and milk chocolates, ensuring even distribution, then cover and let rest for 30 minutes.
- Preheat your oven to 425°F (220°C). Line a muffin tin with paper liners.
- Scoop batter into muffin liners, filling to the rim, and sprinkle extra chocolate chunks on top.
- Bake at 425°F for 7 minutes, then lower to 350°F and bake for an additional 13-15 minutes until done.
- Allow to cool in the tin for 15 minutes, then poke a hole in each muffin and fill with hot fudge sauce.

Notes
Allow the batter to rest for better texture. Customize the hot fudge fill as desired.
