  • 1 large Yellow Bell Pepper
  • 1 large Green Bell Pepper Zucchini can be used as a substitute
  • 1 medium Onion Yellow or white onion works well
  • 3 cloves Garlic Fresh is best, but garlic powder can be used
For the Flavor
  • 2 tbsp Cajun Seasoning Adjust quantity based on heat preference
For the Base
  • 3 cups Cooked Rice Opt for brown rice for a healthier option
  • 2 tbsp Olive Oil or Butter Coconut oil is a great dairy-free alternative
For the Garnish

  • 1 unit Lime Lemon also works well

Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil or butter in a large, non-stick skillet over medium-high heat. Add sliced smoked or andouille sausage and sear for about 3-4 minutes on each side, until golden brown and crispy. Remove sausage from skillet and set aside.
  2. In the same skillet, add chopped onion along with diced red, yellow, and green bell peppers. Sauté for 5-6 minutes until vegetables are softened and onion is translucent with slightly caramelized edges.
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant. Sprinkle in Cajun seasoning, mixing well to coat the vegetables evenly.
  4. Return sausage to the skillet with the sautéed vegetables. Add cooked rice, stirring everything together to ensure the flavors meld. Let simmer for about 2-3 minutes.
  5. Remove from heat and top with freshly chopped parsley. Serve hot with lime wedges on the side.
