- Season the chicken thighs with salt, pepper, and a light coat of flour. Set aside.
- In a skillet, heat olive oil over medium-high heat. Cook the prosciutto until crispy, about 3-4 minutes. Set aside.
- Sear the chicken thighs in the skillet for 5-7 minutes until golden brown. Remove from skillet and set aside.
- Add butter and vegetables to the skillet. Sauté for 6-8 minutes until tender.
- Stir in tomato paste, thyme, salt, and pepper. Add brandy, simmer for 1-2 minutes, then add red wine and simmer for 2-3 minutes.
- Return the chicken, pour in chicken broth, cover, and simmer on low for 10-15 minutes.
- Remove lid, sprinkle with prosciutto, and serve hot over mashed potatoes or with bread.
