Ingredients
  

For the Chicken
  • 1.5 pounds boneless skinless chicken thighs can substitute with chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/4 cup flour gluten-free all-purpose flour can be used
For the Sauce
  • 2 tablespoons extra virgin olive oil or vegetable oil/butter
  • 2 tablespoons salted butter or unsalted butter
  • 1 medium yellow onion, chopped or shallots
  • 3 cloves garlic, chopped fresh garlic is best
  • 2 medium shallots, chopped can substitute with more onions
  • 2 medium chopped carrots other root vegetables can be included
  • 2 tablespoons tomato paste or canned tomatoes
  • 8 ounces sliced cremini mushrooms or button/shiitake mushrooms
  • 1/2 cup brandy optional, can use chicken broth for non-alcoholic version
  • 1 cup red wine pinot noir or cabernet sauvignon
  • 1 cup chicken broth preferred chicken bone broth
  • 2 teaspoons fresh thyme or dried thyme, use less
For the Topping
  • 4 slices prosciutto or can substitute with bacon

Method
 

Step-by-Step Instructions
  1. Season the chicken thighs with salt, pepper, and a light coat of flour. Set aside.
  2. In a skillet, heat olive oil over medium-high heat. Cook the prosciutto until crispy, about 3-4 minutes. Set aside.
  3. Sear the chicken thighs in the skillet for 5-7 minutes until golden brown. Remove from skillet and set aside.
  4. Add butter and vegetables to the skillet. Sauté for 6-8 minutes until tender.
  5. Stir in tomato paste, thyme, salt, and pepper. Add brandy, simmer for 1-2 minutes, then add red wine and simmer for 2-3 minutes.
  6. Return the chicken, pour in chicken broth, cover, and simmer on low for 10-15 minutes.
  7. Remove lid, sprinkle with prosciutto, and serve hot over mashed potatoes or with bread.
