Preparation Steps
- Begin by freshly squeezing the juice from three mandarins; this should yield about three tablespoons of orange juice.
- In a mason jar or a sealable container, combine the freshly squeezed orange juice, 1 cup of light coconut milk, 1/4 cup of chia seeds, 2 tablespoons of maple syrup, and a splash of vanilla extract. Stir the mixture well.
- Allow the mixed ingredients to sit for about five minutes, giving the chia seeds time to absorb the liquid. Stir again to prevent clumping.
- Cover the mason jar or container tightly and refrigerate the mixture for at least two hours, or overnight for best results.
- Once your Orange Creamsicle Chia Pudding has thickened, spoon it into bowls or glasses, and top with Greek yogurt, mandarin orange slices, orange zest, and coconut flakes.

Notes
For best flavor and texture, always use freshly squeezed orange juice and follow the STIR → SIT → STIR AGAIN rule for smooth pudding. Store in an airtight container in the fridge for up to 5 days.
