Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Crush 20 Oreo cookies into fine crumbs and mix with melted unsalted butter until sandy.
  2. Line a muffin tin with cupcake liners and press 1 tablespoon of the mixture into the bottom of each liner. Bake for 10 minutes.
  3. In a bowl, beat the softened cream cheese and sugar until fluffy. Fold in sour cream and optional mini chocolate chips.
  4. Spoon cheesecake filling into the cooled crusts until nearly full. Bake for 15-18 minutes until slightly jiggly.
