Ingredients
  

For the Chimichurri Sauce
  • 1 cup fresh parsley finely chopped
  • 3 cloves garlic minced
  • 1 medium Fresno pepper finely chopped
  • 1 teaspoon dried oregano
  • 1/2 cup extra virgin olive oil high-quality
  • 1/4 cup red wine vinegar
  • to taste salt
  • to taste fresh ground pepper
For the Shrimp
  • 1 pound jumbo shrimp peeled and deveined
  • 1 tablespoon honey light-colored
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil for marinating
  • to taste salt
  • to taste black pepper

Method
 

Instructions
  1. Finely chop the fresh parsley, garlic, and Fresno pepper by hand. In a medium bowl, combine with dried oregano, salt, fresh ground pepper, red wine vinegar, and olive oil.
  2. Allow the chimichurri sauce to sit for at least 1 hour at room temperature.
  3. Prepare the shrimp by cleaning them. In a bowl, toss with olive oil, minced garlic, honey, smoked paprika, salt, and black pepper. Cover and marinate in the refrigerator for about 20 minutes.
  4. Heat a large skillet over high heat and add the marinated shrimp in a single layer. Sear the shrimp for 2-3 minutes on each side until cooked through.
  5. Transfer the shrimp to a serving dish and spoon chimichurri sauce over the top. Serve immediately.
