- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, a pinch of salt, and cinnamon if desired.
- Unroll the refrigerated crescent dough and separate it into 8 triangles.
- Place about one tablespoon of the filling mixture at the wide end of each triangle and roll from the wide end towards the tip.
- Arrange the rolled crescents on the prepared baking sheet, ensuring space between each.
