  • 1 tablespoon Sugar adjust according to taste
  • 1 teaspoon Salt kosher or sea salt
  • 1 teaspoon Dried Marjoram optional
  • 1 teaspoon Ground Cumin optional

Step-by-Step Instructions
  1. Start by slicing the habanero peppers, ripe pineapple, onion, and ginger into small pieces. Be cautious with the habaneros; wearing gloves is recommended to avoid any irritation. Aim for uniform sizes to ensure even cooking.
  2. In a pot, combine the chopped onion, pineapple, sliced habaneros, and ginger with 1 cup of water. Allow this mixture to simmer over medium heat for about 5-10 minutes.
  3. Once the ingredients are softened, stir in salt and sugar to balance the flavors. Let the mixture simmer for another 2-3 minutes.
  4. Remove the pot from heat and transfer the mixture into a blender. Add white vinegar, lime juice, dried marjoram, and ground cumin to the blender as well. Blend everything thoroughly until you achieve a smooth consistency.
  5. Allow the blended hot sauce to cool for a few minutes. As it cools, give it a taste and adjust the seasoning as needed.
  6. Once completely cooled, pour the Pineapple Habanero Hot Sauce into hot sauce bottles or mason jars. Seal them tightly and store in the refrigerator.
