- In a blender, combine 2 cups of chopped ripe pineapple and 2 cups of hulled and sliced strawberries with 2 cups of cold water. Blend until smooth, about 30–40 seconds.
- Grab a fine mesh sieve over a large pitcher and pour the blended mixture into the sieve. Press down on the pulp to extract juice. Discard remaining pulp.
- Add 2 cups of cold water, 1/4 cup of granulated sugar, and the juice of 1 lime to the pitcher. Stir until the sugar completely dissolves.
- Taste your agua fresca and adjust sweetness by adding more sugar if desired.
- Chill in the refrigerator for at least 30 minutes to enhance flavor.
- Serve over ice cubes and garnish with fresh mint leaves.
