- Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes thoroughly, then place them on a baking sheet lined with parchment paper.
- Bake the sweet potatoes for 45–60 minutes until tender and slightly caramelized. Flip halfway through for even cooking.
- While the sweet potatoes bake, heat a skillet over medium heat and cook the ground turkey for about 5–7 minutes, breaking it apart as it cooks.
- Add the black beans to the skillet with the browned turkey and let simmer for another 3–5 minutes.
- Once sweet potatoes are baked, slice them open lengthwise and mash the insides slightly before filling with the turkey and black bean mixture.
- Sprinkle shredded cheese over the stuffed sweet potatoes and return to the oven for an additional 5–10 minutes until cheese melts.
