Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes thoroughly, then place them on a baking sheet lined with parchment paper.
  2. Bake the sweet potatoes for 45–60 minutes until tender and slightly caramelized. Flip halfway through for even cooking.
  3. While the sweet potatoes bake, heat a skillet over medium heat and cook the ground turkey for about 5–7 minutes, breaking it apart as it cooks.
  4. Add the black beans to the skillet with the browned turkey and let simmer for another 3–5 minutes.
  5. Once sweet potatoes are baked, slice them open lengthwise and mash the insides slightly before filling with the turkey and black bean mixture.
  6. Sprinkle shredded cheese over the stuffed sweet potatoes and return to the oven for an additional 5–10 minutes until cheese melts.
  7. Remove from the oven and top with avocado, sour cream, and green onions before serving.
