Step-by-Step Instructions
  1. Begin by dicing the apple into bite-sized pieces. Toss the chopped apple with a dash of cinnamon. Warm 1 tablespoon of peanut butter in the microwave for about 10 seconds, drizzle it over the apples, and sprinkle with 1 tablespoon of raisins.
  2. In a mixing bowl, crack 2 eggs and whisk with a splash of water. Heat a non-stick skillet and pour in the egg mixture. Stir gently as they cook for about 3-4 minutes, then add 2 ounces of your choice of cooked lean protein and stir just to heat through.
  3. Place ½ cup of cottage cheese in a bowl and create a small well in the center. Drizzle 1 teaspoon of honey over it.
  4. Add the scrambled eggs and protein mixture over the cottage cheese and honey. Optionally add cheese slices or cubes around the eggs.
