  • 12 ounces Spaghetti Whole wheat or gluten-free options can be used.
For the Sauce
  • 6 slices Thick-Cut Bacon Turkey bacon can be used or omit for a vegetarian option.
  • 1 tablespoon Olive Oil Optional if enough bacon grease is present.
  • 2 cups Mushrooms (sliced) Cremini or shiitake can be used.
  • 2 cloves Garlic (minced)
  • 1 cup Canned Pumpkin Puree Fresh roasted pumpkin works too.
  • 0.5 teaspoon Dried Thyme
  • 0.5 teaspoon Smoked Paprika
  • 0.25 teaspoon Nutmeg Optional for flavor.
  • to taste Salt and Pepper
  • 0.5 cup Heavy Cream Milk or plant-based alternatives can be used.
  • 0.5 cup Parmesan Cheese (grated) Nutritional yeast can substitute.
  • as needed Fresh Parsley For garnish.

Method
 

Cooking Steps
  1. Fill a large pot with salted water and bring it to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Reserve ½ cup pasta water before draining.
  2. In a large skillet, heat thick-cut bacon over medium flame for 5-7 minutes until crispy. Transfer to a paper towel to drain and crumble.
  3. Leave 1 tablespoon of bacon grease in the skillet. Sauté sliced mushrooms over medium heat for 5-7 minutes until browned.
  4. Stir minced garlic into the skillet with mushrooms and cook for an additional minute until fragrant.
  5. Add pumpkin puree, thyme, paprika, nutmeg, salt, and pepper to the skillet. Stir well and heat for 2-3 minutes.
  6. Pour in heavy cream and add grated Parmesan cheese. Stir over low heat for 2-3 minutes until thickened.
  7. Combine drained spaghetti into the skillet, gently tossing to coat. Add reserved pasta water if needed for consistency.
  8. Serve the spaghetti in bowls topped with crumbled bacon and parsley. Optionally, add more Parmesan on top.
