  • 200 g Pasta Any type like spaghetti or fusilli
For the Spinach and Feta Mix
  • 200 g Fresh Spinach Frozen spinach can be used if well-drained
  • 150 g Feta Cheese Can swap for crumbled tofu or vegan feta
For the Flavor Boost
  • 2-3 tablespoons Olive Oil
  • 2-3 cloves Garlic Finely chopped
  • 1/2 lemon Lemon Juice Juice of half a lemon
  • Salt To taste
  • Pepper To taste
Optional Enhancements
  • Chili-Flakes For a little kick
  • Roasted Pine Nuts For added crunch

Method
 

Step-by-Step Instructions
  1. In a large pot, bring salted water to a rapid boil over high heat.
  2. Add your chosen pasta to the boiling water and cook according to package instructions, usually 8-10 minutes, until al dente.
  3. While the pasta is cooking, heat 2-3 tablespoons of olive oil in a large pan over medium heat. Add 2-3 cloves of finely chopped garlic and sauté for about 30 seconds or until fragrant.
  4. Incorporate the 200 g of fresh spinach into the pan with the sautéed garlic, stirring it gently. Cook for about 2-3 minutes until the spinach wilts down.
  5. Crumble 150 g of feta cheese into the pan, stirring gently until combined and slightly melted.
  6. Once the pasta has cooked, reserve about a cup of the starchy pasta water and then drain the rest in a colander.
  7. Add the drained pasta to the spinach and feta mixture in the pan, tossing everything together over low heat.
  8. Drizzle the mixture with the juice of half a lemon and season generously with salt, pepper, and optional chili flakes.
  9. Serve your Quick Spinach Feta Pasta immediately while warm, optionally garnished with roasted pine nuts.
