- In a large pot, bring salted water to a rapid boil over high heat.
- Add your chosen pasta to the boiling water and cook according to package instructions, usually 8-10 minutes, until al dente.
- While the pasta is cooking, heat 2-3 tablespoons of olive oil in a large pan over medium heat. Add 2-3 cloves of finely chopped garlic and sauté for about 30 seconds or until fragrant.
- Incorporate the 200 g of fresh spinach into the pan with the sautéed garlic, stirring it gently. Cook for about 2-3 minutes until the spinach wilts down.
- Crumble 150 g of feta cheese into the pan, stirring gently until combined and slightly melted.
- Once the pasta has cooked, reserve about a cup of the starchy pasta water and then drain the rest in a colander.
- Add the drained pasta to the spinach and feta mixture in the pan, tossing everything together over low heat.
- Drizzle the mixture with the juice of half a lemon and season generously with salt, pepper, and optional chili flakes.
