Ingredients
  

Dough
  • 500 g Strong White Bread Flour or all-purpose flour
  • 75 g Caster Sugar or granulated sugar
  • 10 g Fine Sea Salt
  • 7 g Fast-Action Dried Yeast or fresh yeast
  • 250 ml Whole Milk or almond/oat milk
  • 2 large Eggs or equivalent substitutes
  • 75 g Unsalted Butter or margarine
Filling
  • 250 g Full-Fat Cream Cheese or low-fat varieties
  • 180 g Raspberry Jam or other fruit jams
Glaze
  • 100 g Icing Sugar or powdered sugar
  • 2 tbsp Lemon Juice or vinegar
  • 1 tbsp Rose Water optional
  • 1 tbsp Vanilla Bean Paste or vanilla extract
Garnish
  • to taste Edible Dried Rose Petals or chopped nuts
  • to taste Chopped Shelled Pistachios or preferred nuts/seeds

Method
 

Steps
  1. In a stand mixer, blend strong white bread flour, caster sugar, fine sea salt, and fast-action dried yeast. Gradually pour in warm whole milk and add eggs. Knead for about 10 minutes until smooth.
  2. Transfer the dough into a greased bowl, cover with plastic wrap, and refrigerate for 8 hours or overnight.
  3. Flour your work surface and roll the dough into a large rectangle about ½ inch thick. Spread full-fat cream cheese and dollop raspberry jam on top. Roll tightly and slice into 12 equal pieces.
  4. Place buns in a greased baking tin, cover with a towel, and let rise for 45 minutes to 1 hour until puffy.
  5. Preheat oven to 190°C (375°F) and bake buns for 30-35 minutes until golden brown and hollow-sounding when tapped.
  6. Mix icing sugar, lemon juice, and rose water until smooth. Brush glaze over warm buns. Sprinkle with edible rose petals and pistachios.
