- In a medium saucepan, combine pitted fresh sweet cherries with enough water to just cover them. Bring the mixture to a boil over medium heat, then reduce to a gentle simmer. Mash the cherries after about 5 minutes and let it simmer for another 10 minutes until the cherries are soft and juicy.
- Transfer the warm cherry mixture to a high-speed blender, and add raw honey, lime zest, and freshly squeezed lime juice. Blend on high until completely smooth, about 30 seconds. Strain if desired and chill the syrup in the refrigerator for about 15 minutes.
- To serve, fill each glass with ice cubes. Pour approximately 2 ounces of the chilled cherry syrup over the ice and top off with club soda.
- Garnish with fresh cherries and lime slices on the rim of each glass before serving.
- For gatherings, combine all the syrup with club soda in a large pitcher filled with ice for easy serving.
