Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a small mixing bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of red wine vinegar, 2 tablespoons of stone ground mustard, 1 teaspoon of garlic powder, and freshly cracked pepper to taste.
  3. Slice three bell peppers and one onion into 1/4-inch strips and arrange them on a large baking sheet.
  4. Add 5 bratwurst links to the baking sheet alongside the sliced peppers and onions. Drizzle the vinaigrette over the mixture and toss to coat.
  5. Roast in the oven for 20 minutes, then stir and continue roasting for an additional 20-25 minutes until browned and cooked through.
  6. Stuff the bratwurst, peppers, and onions into buns, sprinkle with cheddar if desired, and return to the oven for 5 minutes.
  7. Serve hot with extra mustard on the side.
