Step‑by‑Step Instructions
  1. In a large mixing bowl, whisk together melted unsalted butter, pure honey, packed dark brown sugar, and granulated sugar until it becomes light and smooth. Add the egg and vanilla extract, stirring until well combined.
  2. Sprinkle all-purpose flour, baking soda, and kosher salt evenly over the wet mixture. Fold the flour into the mix using a spatula until no flour streaks remain.
  3. Cover the mixing bowl and refrigerate the cookie dough for 30 minutes.
  4. Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  5. Scoop out portions of dough the size of 2 tablespoons and place them onto the baking sheet, spacing each about 3 inches apart.
  6. Bake the cookies for 10 to 12 minutes, until the edges are deep caramelized and the centers appear slightly soft.
  7. Once baked, remove the cookies from the oven and tap the baking sheet on the counter. Immediately sprinkle flaky sea salt on top and let them cool.
