Step-by-Step Instructions for Pizza Eggs
- Start by placing a non-toxic frying pan over medium heat. Add your grated reduced-fat cheese and spread it evenly across the pan. Allow the cheese to melt gently for about 3-4 minutes.
- While the cheese is melting, crack 2-3 eggs into a mixing bowl and whisk them until they're fully combined and frothy. Once whisked, carefully pour the mixture over the melted cheese in the pan.
- Cover the frying pan with a lid and let the eggs cook for around 5-6 minutes on medium heat. The bottom should become firm and the top should be a soft golden color.
- Using a spatula, gently slide under the cooked egg-cheese mixture to flip it. Cook the other side for an additional 2-3 minutes, allowing it to set further.
- Once flipped, take a tablespoon of passata and spread it evenly across the top of your Pizza Eggs. Layer on a few slices of salami, then sprinkle additional cheese over everything.
- Remove the pan from the heat. Sprinkle your mixed herbs generously over the top of the Pizza Eggs for that aromatic finish. Cut into wedges and serve immediately.
