Step-by-Step Instructions for Pizza Eggs
  1. Start by placing a non-toxic frying pan over medium heat. Add your grated reduced-fat cheese and spread it evenly across the pan. Allow the cheese to melt gently for about 3-4 minutes.
  2. While the cheese is melting, crack 2-3 eggs into a mixing bowl and whisk them until they're fully combined and frothy. Once whisked, carefully pour the mixture over the melted cheese in the pan.
  3. Cover the frying pan with a lid and let the eggs cook for around 5-6 minutes on medium heat. The bottom should become firm and the top should be a soft golden color.
  4. Using a spatula, gently slide under the cooked egg-cheese mixture to flip it. Cook the other side for an additional 2-3 minutes, allowing it to set further.
  5. Once flipped, take a tablespoon of passata and spread it evenly across the top of your Pizza Eggs. Layer on a few slices of salami, then sprinkle additional cheese over everything.
  6. Remove the pan from the heat. Sprinkle your mixed herbs generously over the top of the Pizza Eggs for that aromatic finish. Cut into wedges and serve immediately.
