Ingredients
  

For the Stir Fry
  • 14 oz Firm or extra-firm tofu Drained and pressed
  • 1 spray Avocado oil Or any cooking oil
  • 1 medium Shallot
  • 3 cloves Garlic Minced
  • 2 medium Zucchini
  • 2 medium Carrots Peeled and chopped
  • 1 medium Bell pepper Any color
For the Sauce
  • 2 tbsp Sesame oil
  • 3 tbsp Tamari or soy sauce
  • 1 tsp Ground ginger
  • 1 tbsp Rice vinegar Optional
  • 1 tbsp Cornstarch
Optional Garnishes
  • 2 tbsp Chopped green onions
  • 2 tbsp Parsley
  • 1 tbsp Toasted sesame seeds

Method
 

Step-by-Step Instructions
  1. Drain and press the tofu between paper towels to remove excess moisture for about 15 minutes, then cut into bite-sized cubes.
  2. Whisk together cornstarch and a few tablespoons of water in a bowl until smooth; add sesame oil, tamari, ginger, and rice vinegar and combine.
  3. Heat a non-stick skillet over medium-high heat, spray with avocado oil, and add tofu cubes; cook for about 10 minutes until golden brown and crispy.
  4. In the empty skillet, add more avocado oil if needed, then sauté chopped shallots and minced garlic for 2-3 minutes until translucent.
  5. Add sliced zucchini, chopped carrots, and bell pepper to the skillet; cook for about 10-12 minutes until vegetables are tender but still crisp.
  6. Return crispy tofu to the skillet, pour sauce over, and toss gently; cook for an additional 3 minutes until everything is heated through.
  7. Serve immediately, garnished with optional green onions, parsley, or sesame seeds.
