Firecracker Salmon Instructions
- Prepare the Peach Salsa (if using) by combining peaches, Roma tomato, bell pepper, jalapeño, red onion, and lime juice. Stir and set aside.
- Whisk together the Asian sweet chili sauce, Asian chili sauce, soy sauce, red wine vinegar, and honey.
- Mix flour, salt, garlic powder, ground ginger, paprika, and pepper in a shallow dish. Dredge salmon fillets in the mixture.
- Heat oil in a skillet over medium-high heat. Sear the fillets without moving for 3 minutes, then flip and cook for an additional 2 minutes.
- Pour the firecracker sauce over the salmon and simmer for 2-3 minutes, spooning sauce over salmon.
- Remove from heat and let rest for 2-3 minutes before serving with the sauce and optional peach salsa.
