Ingredients
  

For the Salmon
  • 5 6 oz. Salmon Filets skinless, fresh or frozen
  • 0.5 cups Flour use gluten-free flour if needed
  • 1 teaspoon Salt
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Ground Ginger
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Pepper
For the Sauce
  • 0.5 cups Asian Sweet Chili Sauce labelled 'sweet'
  • 2 tablespoons Asian Chili Sauce sambal oelek or sriracha
  • 2 tablespoons Soy Sauce reduced sodium recommended
  • 1 tablespoon Red Wine Vinegar or rice vinegar
  • 1 tablespoon Honey
  • 1 tablespoon Toasted Sesame Oil avoid regular sesame oil
For the Optional Peach Salsa
  • 2 pieces Peaches ripe, firm yellow
  • 1 piece Roma Tomato seeded
  • 1 piece Bell Pepper red, yellow, or orange
  • 1 piece Jalapeño remove seeds for less heat
  • 0.5 pieces Red Onion finely chopped
  • 1 tablespoon Lime Juice freshly squeezed
  • 0.25 cups Cilantro optional

Method
 

Firecracker Salmon Instructions
  1. Prepare the Peach Salsa (if using) by combining peaches, Roma tomato, bell pepper, jalapeño, red onion, and lime juice. Stir and set aside.
  2. Whisk together the Asian sweet chili sauce, Asian chili sauce, soy sauce, red wine vinegar, and honey.
  3. Mix flour, salt, garlic powder, ground ginger, paprika, and pepper in a shallow dish. Dredge salmon fillets in the mixture.
  4. Heat oil in a skillet over medium-high heat. Sear the fillets without moving for 3 minutes, then flip and cook for an additional 2 minutes.
  5. Pour the firecracker sauce over the salmon and simmer for 2-3 minutes, spooning sauce over salmon.
  6. Remove from heat and let rest for 2-3 minutes before serving with the sauce and optional peach salsa.
