Step-by-Step Instructions for Baked Salmon Sushi Cups
  1. Prepare the sushi rice by cooking the uncooked sushi rice according to package instructions until it's tender and sticky. Mix rice vinegar and white sugar in a microwave-safe bowl, heating until the sugar dissolves. Fold in the vinegar mixture into the rice and set aside to cool.
  2. Preheat oven to 400°F (200°C).
  3. In a bowl, combine diced salmon, light soy sauce, Kewpie mayo, sriracha, and sesame oil, mixing until well combined.
  4. Cut nori sheets into pieces that fit the muffin tin, approximately 4 inches by 4 inches.
  5. Grease muffin tin with cooking spray. Place a nori piece in each muffin cup, and fill with sushi rice and then salmon mixture.
  6. Bake for about 15 minutes until salmon is cooked through and tops are golden.
  7. Remove from oven, let cool, then garnish with sriracha, furikake, and green onions before serving.
