Ingredients
  

For the Udon
  • 8 ounces Udon Noodles can substitute with rice noodles or spaghetti
For the Veggies
  • 2 cups Chinese Cabbage can replace with bok choy or spinach
  • 2 cloves Garlic (minced) fresh is best, powdered can be used
  • 1 medium White Onion (sliced) shallots can be substituted
For the Marinade
  • 1 pound Beef (fresh, thinly sliced) tofu or mushrooms can be used for vegetarian version
  • 2 tablespoons Sesame Oil can use neutral oil if unavailable
  • 3 tablespoons Soy Sauce low-sodium preferred
  • 2 tablespoons Oyster Sauce substitute with mushroom sauce for vegetarian
  • 1 tablespoon Cornstarch or Potato Starch for thickening the sauce
  • 1 tablespoon Chinese White Rice Vinegar apple cider vinegar can be used
For the Sauce
  • 2 tablespoons Dark Soy Sauce regular soy sauce can work
  • 1 teaspoon Fresh Ground Black Pepper adjust for heat
  • 1/2 cup Water
For Flavor Enhancements
  • 1 teaspoon Salt to taste
  • 1 teaspoon Sugar or honey for natural sweetness

Method
 

Step-by-Step Instructions
  1. In a bowl, whisk together minced garlic, sesame oil, soy sauce, oyster sauce, Chinese white rice vinegar, and cornstarch until combined. Marinate beef for 10 minutes.
  2. Fill a pot with water and bring to a boil. Add udon noodles and cook for 1-2 minutes. Drain and set aside.
  3. In a mixing bowl, combine dark soy sauce, oyster sauce, black pepper, water, and cornstarch. Stir until smooth.
  4. Heat a wok over medium-high heat with oil. Add garlic and onions, stir for 1-2 minutes until fragrant. Add Chinese cabbage and cook until wilted.
  5. Add marinated beef to the wok, spread out and stir-fry for 2-3 minutes until browned and just cooked through.
  6. Pour sauce into the wok, stir until thickened (about 1-2 minutes). Add udon and toss until coated. Serve hot.
