Method
 

Step‑by‑Step Instructions
  1. Begin by washing, trimming, and quartering 12.5 pounds of fresh tomatoes. In a large pot, bring water to a boil and add the tomatoes.
  2. Once the tomatoes are mushy, use an immersion blender to puree them until smooth. Add in finely minced onion for flavor.
  3. Stir in the white distilled vinegar, brown sugar, molasses, Worcestershire sauce, and liquid smoke, along with the specified spices.
  4. Set the pot over medium heat and allow the sauce to reach a simmer. Let it cook uncovered for 1.5 to 2 hours.
  5. Mix the reserved BBQ sauce with Thermflo to create a slurry. Whisk this into the pot.
  6. Ensure your canning jars are sterilized. Pour the hot BBQ sauce into the jars.
  7. Place the filled jars into a boiling water bath and process for 20 minutes.
