Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare an 8×4-inch loaf pan.
  2. In a large mixing bowl, whisk together 2 large eggs, 1 cup of milk, 1/4 cup of olive oil, and 1/2 cup of yogurt until smooth.
  3. In a separate bowl, sift together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of garlic powder.
  4. Gently fold the dry ingredients into the wet mixture until just combined—about 30 seconds.
  5. Fold in 1 1/2 cups of shredded mozzarella cheese, 1/2 cup of chopped sun-dried tomatoes, and 1/2 cup of fresh basil leaves.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 40–45 minutes, or until golden brown and a toothpick comes out clean.
  8. Remove from the oven and cool in the pan for about 10 minutes before slicing.
