- Preheat your oven to 350°F (175°C). Grease an 8x4-inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk together 2 eggs, 1 cup of milk, ⅓ cup of olive oil, and ½ cup of yogurt until smooth.
- In another bowl, sift together 1 ½ cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of garlic powder.
- Gently fold the dry mixture into the wet mixture until combined. Then add 1 cup of shredded mozzarella, ½ cup of chopped sun-dried tomatoes, and ¼ cup of fresh basil.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
- Bake for 40–45 minutes until golden brown and a toothpick inserted comes out clean.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
