- Pat the salmon fillets dry with paper towel and season with salt, pepper, curry powder, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes until crispy, then flip and cook for another 4-5 minutes.
- In the same skillet, reduce heat and sauté diced onion and peppers for 3-4 minutes. Add curry powder and cook for another minute.
- Pour in coconut milk and simmer for 3-4 minutes until the sauce thickens.
- Return the salmon to the skillet, spoon sauce over, and simmer for 1-2 minutes until heated through.
- Serve with jasmine rice or sautéed vegetables, drizzled with extra sauce and garnished with fresh herbs.
