Ingredients
  

For the Salmon
  • 4 fillets Salmon Can substitute with firm tofu or chickpeas.
  • 2 tablespoons Olive Oil Coconut oil can be used for extra tropical flavor.
For the Curry Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 can Coconut Milk Opt for light coconut milk to reduce fat.
  • 2 tablespoons Caribbean-Style Curry Powder Regular curry powder is a good substitute.
  • 1 medium Onion Any preferred type works.
  • 1-2 medium Peppers Use any color bell pepper.
  • 1 teaspoon Garlic Powder Fresh garlic can also be used.

Method
 

Directions
  1. Pat the salmon fillets dry with paper towel and season with salt, pepper, curry powder, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes until crispy, then flip and cook for another 4-5 minutes.
  3. In the same skillet, reduce heat and sauté diced onion and peppers for 3-4 minutes. Add curry powder and cook for another minute.
  4. Pour in coconut milk and simmer for 3-4 minutes until the sauce thickens.
  5. Return the salmon to the skillet, spoon sauce over, and simmer for 1-2 minutes until heated through.
  6. Serve with jasmine rice or sautéed vegetables, drizzled with extra sauce and garnished with fresh herbs.
