Creamy Garlic Sauce
  • 1 cup Greek Yogurt
  • 2 tablespoons Tahini optional
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic minced

Method
 

Marinate Chicken
  1. In a large bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, olive oil, lemon juice, salt, and pepper. Mix well to form a fragrant marinade. Add the chicken thighs, ensuring they are coated evenly, then cover the bowl with plastic wrap. Refrigerate for at least 1 hour or overnight.
Prepare Sauce
  1. While the chicken marinates, prepare the creamy garlic sauce. In a separate bowl, mix Greek yogurt, minced garlic, lemon juice, tahini (if using), and a pinch of salt. Stir until smooth and well combined.
Cook Chicken
  1. Preheat your grill or skillet to medium-high heat. Remove the marinated chicken thighs and grill for about 6-7 minutes per side until cooked to 165°F (75°C).
Assemble Shawarma
  1. To assemble, take a piece of pita or flatbread, layer with sliced chicken, fresh vegetables, and drizzle with creamy garlic sauce. Wrap and enjoy.
