Ingredients
  

Teriyaki Sauce
  • 1/4 cup Soy Sauce Substitute with tamari for gluten-free.
  • 1/2 cup Water
  • 1/4 cup Mirin Can substitute with rice vinegar and sugar.
  • 1 tablespoon Brown Sugar Replace with honey or agave for different flavor.
  • 1 tablespoon Honey
  • 2 cloves Garlic, minced Use garlic powder as a substitute.
  • 1 teaspoon Fresh Ginger, grated Dried ginger can work in a pinch.
  • 1 tablespoon Cornstarch mixed with water Thickens the sauce.
Main Dish
  • 1 pound Boneless Skinless Chicken Thighs, cut into bite-sized pieces Chicken breasts can also be used.
  • Salt To taste.
  • Pepper To taste.
  • 1 tablespoon Vegetable Oil Any neutral oil is suitable.
  • 12 ounces Fresh or Frozen Udon Noodles Rice noodles can be used for gluten-free.
Veggies
  • 1 Onion, sliced
  • 2 Carrots, julienned Bell peppers can substitute.
  • 2 cups Broccoli Florets Can swap with other greens.
  • 1 cup Cabbage, sliced Napa cabbage or bok choy work well.
  • 2 Green Onions, sliced For garnish.
To Garnish
  • Sesame Seeds Optional for garnish.

Method
 

Preparation
  1. In a small saucepan, whisk together soy sauce, water, mirin, brown sugar, honey, garlic, ginger, and cornstarch slurry. Simmer until thickened.
  2. Marinate chicken with salt, pepper, and 1/4 cup teriyaki sauce for at least 15 minutes.
  3. Heat oil in a wok, stir-fry marinated chicken until golden brown and cooked through.
  4. Stir-fry onion and carrots until softened, then add broccoli and cabbage. Cook until vibrant and tender.
  5. Prepare udon noodles according to package instructions, then drain and rinse.
  6. Combine chicken, noodles, and vegetables in the wok with sauce, stir-frying gently.
  7. Garnish with green onions and sesame seeds before serving.
