  • 4 medium Potatoes Russets are ideal for mashing.
  • 2 cups Kale Can swap for spinach if preferred.

Method
 

Step-by-Step Instructions
  1. Marinate the steak by mixing melted butter and Irish whiskey, then submerging the steak in the marinade for at least 3 hours.
  2. Sear the steak in a preheated cast iron pan for 3-4 minutes on each side.
  3. Bake the steak in a 350°F oven for approximately 10 minutes.
  4. Prepare colcannon by boiling and mashing potatoes, mixing in cooked kale, butter, salt, and pepper.
  5. Make the whiskey cream sauce by sautéing shallots, deglazing with whiskey, and adding cream, simmering until thickened.
  6. Serve the colcannon first, then top with sliced steak and drizzle with whiskey cream sauce.
