Step-by-Step Instructions
  1. Prepare the marinade by combining olive oil, garlic powder, smoked paprika, salt, and pepper. Coat the chicken and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat (approximately 450°F). Grill the marinated chicken for 6–8 minutes per side until cooked through.
  3. Grill fresh corn for 10–12 minutes, turning until charred, or sauté frozen corn for 4–5 minutes until heated through.
  4. Cook rice according to package instructions. Mix in lime zest and juice for added flavor.
  5. Assemble the bowl starting with rice, then adding sliced grilled chicken, grilled corn, chopped cherry tomatoes, and optional black beans.
  6. Top with cilantro, jalapeño, and cheese if desired, and drizzle with the cilantro lime dressing.
