Step-by-Step Instructions
  1. Marinate the Lamb: Combine diced lamb leg with salt, pepper, garlic, lemon juice, lemon zest, oregano, bay leaves, vinegar, and olive oil. Toss well, cover, and refrigerate for 12 to 24 hours.
  2. Prepare Skewers: Preheat grill or pan over medium heat. Soak wooden skewers for 30 minutes. Thread 3-4 pieces of lamb onto each skewer.
  3. Cook the Lamb: Drizzle olive oil in the pan or brush onto grill grates. Cook skewers for about 3 minutes on each side until seared and golden brown.
  4. Serve: Let skewers rest for a few minutes. Serve with pita, tzatziki, and your choice of salad or rice.
