  • 1 cup Dry Red Beans or kidney beans
  • 1 tablespoon Cooking Oil olive oil or any mild-flavored oil
  • 6 cups Water
For the Seasoning
  • 12 ounces Andouille Sausage or smoked sausage
  • 1 medium Yellow Onion or white/red onion
  • 1 medium Green Bell Pepper or poblano/red bell pepper
  • 1 stalk Celery or fennel
  • 4 cloves Garlic minced, or use garlic powder
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 teaspoon Dried Thyme fresh thyme is also good
  • 1 teaspoon Garlic Powder optional
  • 1 teaspoon Onion Powder optional
  • 1/2 teaspoon Cayenne Pepper adjust to taste
  • 1/2 teaspoon Black Pepper freshly cracked preferred
  • 2 leaves Bay Leaves fresh or dried
  • 1/4 cup Chopped Parsley or cilantro
  • 1 teaspoon Salt adjust to taste
For the Rice
  • 1 cup Long Grain White Rice or brown rice
  • 2 green onions Green Onions or chives

Method
 

Step-by-Step Instructions
  1. Soak the beans overnight in a large bowl covered with water.
  2. In a large pot, heat cooking oil over medium heat and brown sliced sausage for 5–7 minutes.
  3. Cook diced onion, green bell pepper, and celery in the sausage drippings for 5–6 minutes until tender.
  4. Add minced garlic and spices to the soft vegetables, stirring for about 1 minute.
  5. Add soaked and rinsed beans and water, bringing to a boil.
  6. Reduce heat and simmer uncovered for 1 hour, stirring occasionally.
  7. Mash about a third of the beans to thicken the mixture and simmer for another 30 minutes.
  8. Cook rice according to package instructions.
  9. Stir in the cooked sausage and parsley before serving.
  10. Serve the bean mixture over rice, garnished with green onions.
