Ingredients
  

Steak Marinade
  • 1 pound Sirloin Steak or flank/ribeye for different textures
  • 2 tablespoons Olive Oil or avocado oil
  • 2 cloves Garlic minced; garlic powder as alternative
  • 2 tablespoons Lemon Juice fresh is best
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
Base
  • 1 cup Cooked Grains brown rice, quinoa, or cauliflower rice
Veggie Medley
  • 1 cup Cherry Tomatoes halved; grape tomatoes as substitute
  • 1 cup Cucumber diced; zucchini can be used
  • 1/2 cup Red Onion thinly sliced; shallots as alternative
  • 1/2 cup Kalamata Olives pitted; any favorite olives work
Toppings
  • 1/2 cup Feta Cheese crumbled; omit for dairy-free
  • 1/4 cup Fresh Herbs parsley or dill, chopped; basil as substitute
Tzatziki Sauce
  • 1 cup Greek Yogurt plain; coconut yogurt for dairy-free
  • 1/2 cup Cucumber grated and squeezed dry
  • 1 tablespoon Honey optional; omit for Whole30
Vinaigrette
  • 2 tablespoons Olive Oil or another mild oil
  • 2 tablespoons Lemon Juice fresh is best
  • 1 clove Garlic minced
  • 1 teaspoon Oregano adjust to taste

Method
 

Steak Bowl Preparation
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper, then coat the sirloin steak. Marinate for at least 30 minutes.
  2. Prepare tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper. Refrigerate for at least 15 minutes.
  3. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the vinaigrette.
  4. Heat a skillet over medium-high heat. Sear marinated steak for 4-5 minutes on each side for medium-rare. Rest before slicing.
  5. Assemble the bowl: start with cooked grains, layer with steak, cherry tomatoes, cucumber, red onion, olives, feta, and herbs.
  6. Top with tzatziki sauce and vinaigrette before serving.
