- In a large bowl, combine chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Marinate for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Sear marinated chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
- Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth. This is the sauce base.
- In the same skillet, add tomato paste and fry for 2 minutes. Then, add the blended tomato mixture and cook for 10-12 minutes until thick.
- Add garlic powder, ginger powder, and bouillon cube to the sauce, stirring until dissolved. Taste and adjust seasoning.
- Return seared chicken to the skillet, cover, and simmer for 25-30 minutes over low heat.
- Garnish with parsley or cilantro and serve hot over rice, plantains, or yams.
