Method
 

Step-by-Step Instructions
  1. In a large bowl, combine chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear marinated chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth. This is the sauce base.
  4. In the same skillet, add tomato paste and fry for 2 minutes. Then, add the blended tomato mixture and cook for 10-12 minutes until thick.
  5. Add garlic powder, ginger powder, and bouillon cube to the sauce, stirring until dissolved. Taste and adjust seasoning.
  6. Return seared chicken to the skillet, cover, and simmer for 25-30 minutes over low heat.
  7. Garnish with parsley or cilantro and serve hot over rice, plantains, or yams.
