Step-by-Step Instructions
  1. Start by placing the chicken thighs in a bowl and adding soy sauce, oyster sauce, black pepper, and corn starch. Mix everything well to ensure the chicken is evenly coated. Let it marinate for 10 minutes.
  2. While the chicken marinates, chop fresh scallions finely. Separate the white parts from the green ones.
  3. Heat oil in a non-stick pan over medium heat. Add the marinated chicken thighs and cook for about 8-10 minutes until fully cooked.
  4. Add the chopped white parts of the scallions to the pan and sauté for about 1-2 minutes until softened.
  5. Stir in the chopped green parts of the scallions and cook for another 10-20 seconds.
  6. Serve the scallion chicken hot over rice or noodles, garnished with extra black pepper or scallions.
