Method
 

Steps
  1. Preheat your oven to 400°F (200°C) for crispy tortillas.
  2. In a skillet over medium heat, brown the beef with onion and cilantro stems for 5-7 minutes.
  3. Add tomato paste and spices, simmer for 2-3 minutes.
  4. Line a baking sheet with parchment. Arrange tortillas without overlapping.
  5. Brush olive oil on both sides of each tortilla.
  6. Fill each tortilla with beef mixture and sprinkle cheese. Fold and press.
  7. Bake for 15 minutes until tortillas are golden and cheese bubbles.
  8. Blend avocado, sour cream, lime juice, cilantro, and salt for crema.
