Ingredients

  • 1 lb Ground Pork Can substitute with ground shrimp.
  • 1 large Egg Acts as a binder.
  • 2 tbsp Coriander Roots Fresh coriander stems can be used if needed.
  • 1 tsp Black Peppercorns White pepper can be used instead.
  • 2 cloves Garlic Use garlic powder as substitute if in a hurry.
  • 1/2 cup Carrots Finely diced, can swap with bell peppers.
  • 3 stalks Green Onions Chives are a good alternative.
  • 1/2 cup Shiitake Mushrooms Dried; fresh mushrooms can replace if needed.
  • 3 tbsp Golden Mountain Sauce Soy sauce is an alternative.
  • 1 tbsp White Sugar Honey or agave syrup can serve as alternatives.
  • 2 tbsp Oyster Sauce For vegetarian option, use mushroom sauce.
  • 1 tbsp Cornstarch Tapioca starch can work as well.
Wrapper Ingredients
  • 1 pkg Dumpling Wrappers Gluten-free wrappers can be used.
  • 1 tbsp Sesame Oil Olive oil alters the flavor.
  • 1 tbsp Garlic Oil Optional for preventing sticking.
  • 1/4 cup Crispy Fried Garlic Substitute with fresh herbs for topping.

Method
 

Preparation
  1. Finely pound the coriander roots, black peppercorns, and garlic together in a mortar and pestle.
  2. Combine the Golden Mountain sauce, white sugar, sesame oil, and oyster sauce in a medium bowl and stir until the sugar dissolves.
  3. Blend the ground pork in a food processor until smooth, then add the sauce mixture, egg, and cornstarch; process until combined.
  4. Transfer the filling mixture to a bowl and gently fold in the crushed spice mixture, finely diced carrots, green onions, and shiitake mushrooms.
  5. Place a dumpling wrapper on a flat surface, add filling, moisten edges, fold, and seal tightly.
  6. Preheat the steamer lined with parchment paper, place dumplings inside, and steam for about 10 minutes until wrappers are translucent.
  7. Remove dumplings from the steamer, allow to cool slightly, and serve hot with dipping sauce.
