Step-by-Step Instructions for Easy Vegetable Soup
- In a large pot, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Once shimmering, add 1 diced onion, 2 chopped carrots, and 2 chopped celery stalks. Sauté for about 4-5 minutes until the vegetables are softened and the onion is translucent.
