Step-by-Step Instructions
  1. In a large mixing bowl, whisk together 1 cup of boiling water with the sugar until fully dissolved, about 1-2 minutes.
  2. Sprinkle the gelatin over the sugar mixture and let it sit undisturbed for approximately 2 minutes.
  3. Add the whole milk to the mixture, followed by the rich coconut milk, while whisking continuously for about 1-2 minutes.
  4. If desired, add a few drops of almond extract, stirring well to incorporate.
  5. Carefully pour the pudding mixture into containers, filling about three-quarters full.
  6. Place the filled molds in the refrigerator for at least 4 hours, or until set.
  7. Carefully remove the pudding from the molds.
  8. Garnish with fresh fruit or toasted coconut flakes and serve chilled.
