Step-by-Step Instructions
  1. Grease the inside of your slow cooker with nonstick spray or a drizzle of olive oil.
  2. Place the boneless skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker.
  3. Whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
  4. Pour the honey mustard sauce evenly over the chicken in the slow cooker.
  5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken reaches 165°F.
  6. For a thicker sauce, remove chicken, mix cornstarch with water, stir into cooking liquid, and cook on HIGH for an additional 10–15 minutes.
  7. Return chicken to the slow cooker and spoon sauce over it, allowing it to soak in before serving.
  8. Garnish with freshly chopped parsley before serving.
