- Grease the inside of your slow cooker with nonstick spray or a drizzle of olive oil.
- Place the boneless skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- Whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
- Pour the honey mustard sauce evenly over the chicken in the slow cooker.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken reaches 165°F.
- For a thicker sauce, remove chicken, mix cornstarch with water, stir into cooking liquid, and cook on HIGH for an additional 10–15 minutes.
- Return chicken to the slow cooker and spoon sauce over it, allowing it to soak in before serving.
- Garnish with freshly chopped parsley before serving.
