Step-by-Step Instructions
- Prep the Ribs: Coat the country-style pork ribs with yellow mustard. Sprinkle the BBQ pork rub evenly on both sides and let sit at room temperature.
- Smoke the Ribs: Smoke the seasoned ribs at 250°F for 1.5 to 2 hours until they reach an internal temperature of 165°F.
- Braise the Ribs: Transfer ribs to an aluminum pan, add butter, honey, and BBQ sauce. Cover with foil and braise at 225°F for another 1.5 to 2 hours until they reach 195°F.
- Finish on the Grill: Remove the ribs and increase the temperature to 300°F. Brush with braising liquid and grill for 10 to 15 minutes.
- Rest and Serve: Let the ribs rest for 10 minutes before serving with extra BBQ sauce.

Notes
Ensure the bark is firm before braising and use a meat thermometer for accurate temperature readings. Experiment with different BBQ rubs for added flavor.
